How a Complete Balanced Millet Meal Made Our Day

Balanced Millet Meal:

As the sun’s warm rays filtered through our windows this holiday, my family and I decided to make the most of the day by crafting a meal that resonated with our mission to promote health and sustainability. As a certified millet advisor, I’ve always been passionate about integrating millets into everyday meals, and today was no exception. Preparing a complete millet-balanced meal brought joy and excitement to our hearts. It was a day to nourish our bodies and connect as a family over wholesome food.

We decided to prepare a spread that celebrated the goodness of millets and showcased their versatility. The menu featured Kodo Millet Fried Rice, Little Millet Curd Rice, Arhar Dal Fry, Brinjal Fry, and a vibrant salad. Each dish was crafted with care, blending tradition with the goodness of millets, and the result was a delightful medley of flavors and textures.

Starting the Day with a Purpose:

The day began with a family discussion about what to cook for lunch. Being a holiday, we wanted to break the monotony of regular meals and indulge in something special. After some brainstorming, we decided on a balanced meal that highlighted the nutritional richness of millets, complemented by classic Indian flavors.

Millets have been a part of our diet for years, but creating an entire meal centered around them was a unique and exciting endeavor. The choice of Kodo millet and Little millet was intentional, as these varieties are rich in fiber, protein, and essential nutrients. As we planned the meal, I couldn’t help but reflect on my mission to take millets to millions, and how this meal symbolized everything I stand for.

The Preparation: A Labor of Love

The kitchen was soon abuzz with activity. The first dish on our list was Kodo Millet Fried Rice. Known for its nutty flavor and slightly chewy texture, Kodo millet is a fantastic substitute for rice in stir-fried dishes. We cooked the millet to perfection, ensuring each grain remained separate. Tossed with colorful vegetables like carrots, beans, capsicum, peas, cabbage, and soya chunks, the fried rice was seasoned with freshly chopped spring onions and freshly ground black pepper. The aroma filled the kitchen, and I couldn’t wait to taste it.

Next came the Little Millet Curd Rice, a soothing and refreshing dish perfect for balancing the spicier elements of the meal. Little millet, with its delicate flavor, was cooked until soft and then mixed with creamy yogurt. A tempering of mustard seeds, curry leaves, green chilies, and grated ginger elevated the dish, while a garnish of pomegranate seeds and chopped coriander added a burst of color and freshness.

To complement the millets, we prepared Arhar Dal Fry. This lentil dish, with its earthy flavors and comforting texture, was the perfect protein-rich addition to our meal. Simmered with tomatoes, onions, and a touch of turmeric, the dal was finished with a tempering of ghee, cumin seeds, and red chilies. The aroma of ghee-tempered spices mingled beautifully with the other dishes.

For a touch of indulgence, we included Brinjal Fry, a flavorful side dish. Round slices of brinjal were marinated in a spice blend of turmeric and salt and then fried on tawa until golden brown. The softness of the brinjal added a delightful bite to the meal.

Finally, no meal is complete without a salad. We kept it simple yet nutritious with a mix of cucumber, tomatoes, onions, and grated carrots, dressed with a squeeze of lemon and a sprinkle of chaat masala. The salad brought a burst of freshness and balance to the meal.

Sitting Down Together to Enjoy:

As the dishes came together, we laid the table with anticipation. The vibrant colors of the food were a feast for the eyes, and the inviting aromas made it impossible to wait any longer. Sitting together as a family, we felt a sense of accomplishment and gratitude for the meal we had prepared.

The first bite of the Kodo Millet Fried Rice was a revelation. The millet’s nutty flavor paired perfectly with the crunch of the vegetables and the subtle seasoning. The Little Millet Curd Rice was a creamy, comforting contrast, its cooling effect making it the ideal accompaniment to the spicier dishes. The Arhar Dal Fry was a classic, its rich, earthy flavors complementing the millets beautifully. The Brinjal Fry was the star for those who love a bit of softness in their meal, while the salad provided a refreshing palate cleanser.

  1. Thank you for sharing the recipes and pictures for a meal packed with nutritional goodness. I have switched over to millets for the past 3 years and am enjoying the health benefits too. I go for the local millet, which is kodo millet. I have it as steam-cooked kodo with a spiced dal. Kodo khichadi with nuts and vegetables with kadhi or masala buttermilk is a great combination. Kodo millet can also be made into “muthia” with seasonal green leafy vegetables or the evergreen bottle gourd. The permutation combinations can be endless. The other millets available are jowar and bajra. These can be eaten whole or in milled form.
