Millet Manchurian Recipe – A Healthy & Delicious Twist:

Manchurian is one of the most loved Indo-Chinese dishes, but traditionally, it is made using maida (refined flour), which is unhealthy. Why not give it a nutritious twist? Instead of maida, I have used ragi (finger millet) to make a healthier and tastier version of Millet Manchurian. And trust me, it turned out yummy and delicious! Ingredients for Millet Manchurian Recipe:

For Manchurian Balls:

  • 3 cups finely chopped cabbage
  • 1/2 cup ragi flour
  • 1/4 cup besan (gram flour)
  • 2 tbsp corn flour
  • 1/2 tbsp chili powder
  • 1/2 tbsp crushed black pepper
  • 1/2 tbsp roasted crushed cumin
  • 1 tbsp ginger garlic paste
  • Salt as per taste (approx. 1 tsp)
  • 300 ml rice bran oil (for frying)

For Manchurian Gravy:

  • 2 tbsp oil
  • 6-7 cloves garlic, chopped
  • 1-inch ginger, chopped
  • 1/2 onion, finely chopped
  • 1/2 capsicum, chopped
  • 2 tomatoes, pureed
  • 1 tbsp vinegar
  • 1 tbsp soya sauce
  • 2 tbsp ragi flour (for slurry)
  • 1/4 cup water (for slurry)
  • 1/2 cup water (for gravy)

Step-by-Step Millet Manchurian Recipe:

Step 1: Prepare the Manchurian Balls

  1. In a mixing bowl, add chopped cabbage, ragi flour, besan, corn flour, chili powder, black pepper, crushed cumin, ginger-garlic paste, and salt.
  2. Mix well and form a dough-like consistency. If needed, sprinkle little water.
  3. Shape into small balls and deep fry in hot rice bran oil until golden brown and crispy.
  4. Take out and keep aside.

Step 2: Prepare the Manchurian Gravy

  1. Heat 2 tbsp oil in a pan, add chopped garlic and ginger, and sauté until fragrant.
  2. Add chopped onions and capsicum. Sauté until slightly soft.
  3. Add tomato puree, vinegar, and soya sauce. Mix well.
  4. In a small bowl, mix 2 tbsp ragi flour with 1/4 cup water to make a slurry. Add this to the gravy.
  5. Add 1/2 cup water, bring to a boil, and let it thicken.
  6. Add the fried millet balls and mix well. Cook for 2-3 minutes.

Step 3: Serve & Enjoy

  • Do the plating and serve hot.
  • Enjoy Millet Manchurian as a side dish with fried millet rice or biryani for an extra flavorful meal.
